How keto sweeteners differ from sugar
Sugar does four jobs in a recipe: it sweetens, adds bulk, holds moisture and browns. Keto sweeteners split into two groups by how many of those jobs they can cover. Bulk sweeteners (erythritol, allulose, xylitol) are granulated like sugar and fill the same space in a batter, though each is a little less sweet or behaves a little differently in the oven. Pure extracts (stevia and monk fruit) are hundreds of times sweeter than sugar, so a cup of sugar becomes a gram or two of powder, and the recipe loses its bulk.
That gap is why most products on the shelf are blends. Lakanto Classic and Truvia Sweet Complete pair erythritol with monk fruit or stevia, Besti pairs allulose with monk fruit, and Splenda Allulose adds a small amount of another sweetener to allulose. Swerve is built on erythritol, with allulose in its current formula. Their makers formulate them to measure cup for cup with sugar. Stevia In The Raw is bulked with maltodextrin instead, which is a digestible carbohydrate.
Keto sweeteners compared
Ratios are like for like by volume, granulated for granulated. Pure extracts convert by weight because their powders differ from brand to brand. Every figure traces to a named source in the list at the bottom of the page.
| Sweetener | Sweetness | Replaces 1 cup sugar | Net carbs here | Baking |
|---|---|---|---|---|
| Erythritol (pure) | About 60 to 80% as sweet as sugar | 1⅓ cups (range 1¼ to 1⅔ cups) | 0 g (subtracted in full) | Has a noticeable cooling effect in the mouth, strongest in large amounts and in dry, crystal form. |
| Allulose (pure) | About 70% as sweet as sugar | 1⅓ cups (range 1⅓ cups to 1 cup + 7 tbsp) | 0 g (subtracted in full) | Browns faster than sugar. Splenda suggests lowering the oven about 25°F and tenting with foil. |
| Xylitol | About as sweet as sugar | 1 cup | 50% counted | Does not make breads and pastries rise the way sugar helps yeast to, so yeast doughs need their own adjustments. |
| Monk fruit extract (pure) | About 100 to 400 times as sweet as sugar, depending on mogroside V content | 0.5 to 2 g by weight | Negligible | Adds sweetness only, with none of sugar’s bulk, moisture or browning. |
| Stevia extract (pure) | About 200 to 300 times as sweet as sugar | 0.67 to 1 g by weight | Negligible | Adds sweetness only. It cannot replace sugar’s bulk, moisture or browning, so a straight swap leaves a recipe short on volume. |
| Swerve Granular | Measures like sugar (blend) | 1 cup | 0 g (subtracted in full) | Swerve says it browns and caramelizes; its newer formula adds allulose partly to improve browning. |
| Lakanto Classic Monk Fruit | Measures like sugar (blend) | 1 cup (range ¾ to 1 cup) | 0 g (subtracted in full) | The erythritol version behaves like erythritol: some cooling, and it can recrystallize as it cools. |
| Besti Monk Fruit Allulose Blend | Measures like sugar (blend) | 1 cup | 0 g (subtracted in full) | Allulose-based, so it browns faster than sugar: lower the oven about 25°F and tent with foil if needed. |
| Splenda Allulose Sweetener | Measures like sugar (blend) | 1 cup | 0 g (subtracted in full) | Browns faster than sugar: Splenda suggests lowering the oven about 25°F, tenting with foil, or covering cakes. |
| Truvia Sweet Complete Granulated | Measures like sugar (blend) | 1 cup | 0 g (subtracted in full) | Truvia says it browns in recipes. |
| Stevia In The Raw Bakers Bag | Measures like sugar by volume (blend) | 1 cup | Check label (maltodextrin) | The brand’s own baking recipes pair it with real sugar rather than replacing all of it. |
Why the numbers disagree, and how this converter handles it
Sweetness is measured by taste panels, and panels disagree. Reviews put erythritol anywhere from 60 to 80% as sweet as sugar, which is the difference between 1¼ and 1⅔ cups per cup of sugar. The converter shows Wholesome Yum’s chart value of 1⅓ cups as the headline and the full range underneath. Allulose works the same way: the chart says 1⅓ cups, while straight math on the 70% sweetness figure FDA reports gives about 1.43.
Manufacturers add their own wrinkles. Lakanto says Classic replaces sugar 1:1 but can drop to 3/4 cup if that tastes too sweet. In The Raw lists Stevia In The Raw at 1 cup per cup of sugar, then recommends replacing only half the sugar in baked goods to keep moisture, browning and rise. Where a brand states a number, the converter uses it and quotes the brand.
Net carbs and sweeteners
A cup of granulated sugar is about 200 g of carbohydrate (USDA), all of it digestible. The converter counts sweeteners the way our Net Carb Calculator does: erythritol is subtracted in full (glycemic index 0), while other sugar alcohols count at 50%. Xylitol has a glycemic index of 13 against sugar’s 65, but at half credit a cup of it still adds about 96 g of net carbs, which surprises people who read “0 net carbs” on the bag.
Allulose is a rare sugar, not a sugar alcohol. FDA’s 2020 guidance lets labels exclude it from Total and Added Sugars and count it at 0.4 calories per gram, citing negligible effects on blood glucose and insulin, so the converter treats it as zero. It still appears in Total Carbohydrate on the label, so subtract it by hand.
How almond and coconut flour behave
Almond flour
Finely ground blanched almonds: high in fat, low in carbohydrate, and free of gluten. Without gluten it builds little structure, so cookies spread more and cakes rise less than their wheat versions. King Arthur and Bob’s Red Mill both suggest replacing about a quarter of the wheat flour in a regular recipe without other changes. Bob’s Red Mill says a full 1:1 swap by volume can work, though results come out flatter and moister and often need an extra egg or a little xanthan gum.
Coconut flour
Ground dried coconut, very high in fiber and very thirsty. It soaks up liquid so fast that recipes use a fraction as much: about 1/4 to 1/3 cup in place of a cup of almond flour, with an extra egg for each 1/4 cup. Bob’s Red Mill suggests it can replace about 20% of the wheat flour in a regular recipe and recommends recipes written for coconut flour beyond that.
Binders
Gluten holds a wheat bake together; keto bakes borrow that job from eggs, xanthan gum or psyllium husk. Bob’s Red Mill suggests about 1/4 tsp of xanthan gum per cup of flour for cookies, 1/2 tsp for cakes, 3/4 tsp for muffins and quick breads, and 1 to 1½ tsp for breads. Diet Doctor uses ground psyllium husk alongside almond flour when it replaces coconut flour, to keep the structure the extra eggs provided.
| Flour | Net carbs per cup | Source |
|---|---|---|
| Almond flour | 8 to 12 g | From two Bob’s Red Mill almond flour labels: 1/4 cup (28 g) with 6 g carbs and 3 g fiber works out to 12 g net per cup; 2 tbsp with 3 g carbs and 2 g fiber works out to 8 g. Labels round to whole grams, which explains much of the spread. |
| Coconut flour | 32 g | From the Bob’s Red Mill Organic Coconut Flour label: 2 tbsp (14 g) with 9 g carbs and 5 g fiber, about 32 g net per cup. You use far less of it than almond flour, so per recipe the difference shrinks. |
| Wheat flour (all-purpose) | 92 g | USDA: 1 cup (125 g) of all-purpose flour has 95.4 g carbohydrate and 3.4 g fiber, so about 92 g net. |
The coconut figure looks high next to almond flour, but you use roughly a quarter as much, so per recipe the two land close together. Both sit far below all-purpose wheat flour.
Safety notes
- Xylitol and dogs. FDA warns that xylitol is toxic to dogs even in small amounts. Keep xylitol baking out of reach, and call a vet or animal poison control line straight away if a dog eats some.
- Erythritol and heart health. A 2023 Nature Medicine study linked higher blood erythritol levels with more cardiovascular events in people already at high risk. It was observational and shows an association, not cause and effect. NOW Foods’ erythritol label advises people with cardiovascular disease, a clotting disorder or impaired kidney function to consult a physician first.
- Easing in. Xlear suggests building up xylitol gradually over three to six weeks before fully replacing sugar.
