What is the carnivore diet?

The carnivore diet is the elimination of all plant foods and the exclusive consumption of animal products - primarily meat, fish, and animal fats. Unlike standard ketogenic diets that allow 20-50g of net carbohydrates from low-carb vegetables, nuts, and berries, the carnivore diet maintains 0g of carbohydrates consistently, producing the most stable and deepest form of nutritional ketosis achievable through diet alone.

The diet is not new - it mirrors the eating patterns of many traditional indigenous populations (Inuit, Masai, traditional Plains Native Americans) who thrived on near-exclusive animal food diets. The modern carnivore movement has gained traction through anecdotal reports of improvements in autoimmune conditions, elimination of food sensitivities, dramatic weight loss, and mental clarity - effects that advocates attribute to removing dietary antigens present in plant foods.

Carnivore diet approaches

Beef & Butter (Lion Diet)

The most restrictive approach: ruminant meat (beef, lamb, bison), butter, water, and salt. Popularized by Dr. Shawn Baker and Mikhaila Peterson as an elimination diet for autoimmune conditions. The logic is that beef is the least immunogenic of all meats, making it the safest baseline for identifying food sensitivities. Most practitioners start here and slowly reintroduce foods.

Nose-to-Tail Carnivore

Includes all cuts including organ meats - liver, heart, kidney, bone marrow, and tongue. The most nutritionally complete approach because organ meats contain B vitamins, vitamin A, folate, iron, zinc, copper, and CoQ10 at concentrations far exceeding muscle meat. Liver (1-2× per week) alone provides more bioavailable nutrients than most multivitamins.

All Animal Products

Expands to include all meats, fish, shellfish, poultry, and animal fats. Fatty fish adds omega-3 EPA and DHA. This is the most common long-term carnivore approach - more varied than beef-only, more restrictive than animal + dairy.

Animal Products + Eggs & Dairy

The most flexible carnivore variant, including eggs, butter, cheese, heavy cream, and other full-fat dairy. This version allows the widest range of carnivore-compatible cooking and the most dietary variety. Note: some people find dairy (particularly casein protein or lactose) interferes with weight loss or triggers inflammation - monitor your response.

Carnivore macros: the 70/30/0 ratio

Standard carnivore macros are approximately 70% fat and 30% protein with 0g carbohydrates. The 30% protein allocation is higher than standard keto (25%) for two reasons: first, without carbohydrates, protein plays a more important role in signaling satiety and preserving lean mass; second, the absence of plant foods means you can reliably target higher-quality, more bioavailable protein without concern about combining protein sources.

Unlike some carnivore advocates who recommend eating "to satiety without tracking," using a calculator gives you a meaningful baseline - especially if you have a specific goal (weight loss, body recomposition, or muscle gain). The 70/30 ratio is a starting point; lean toward fattier cuts for weight maintenance or lean cuts for fat loss.

Electrolytes and the carnivore transition

The carnivore transition mirrors the keto flu experience but can be more pronounced for people coming from a standard Western diet, because the transition is more abrupt - from glucose to ketones, from varied diet to animal foods only. The critical intervention is sodium: 3,000-5,000mg per day (generously salting food and drinking bone broth) prevents most headaches, muscle cramps, and fatigue in the transition period.

A meaningful benefit of nose-to-tail carnivore: organ meats provide potassium and magnesium naturally. Liver contains roughly 300mg potassium per 3oz serving, and heart provides magnesium. People following beef-only carnivore without organ meats may need to supplement potassium and magnesium separately.

Who should consider carnivore keto?

Carnivore is most commonly adopted by people who have not achieved their desired results on standard keto, who suspect food sensitivities or autoimmune triggers from plant foods, or who find the elimination of all plant foods produces dramatic symptom improvement in conditions like psoriasis, IBS, rheumatoid arthritis, or Crohn's disease. It is also used as an elimination protocol - the strictest possible dietary reset - before systematically reintroducing foods.

Carnivore is not recommended as a first-line dietary approach without medical supervision for people with kidney disease, gout, elevated uric acid, or familial hypercholesterolemia. The high saturated fat content may be a concern for certain cholesterol phenotypes - discuss with your doctor before starting.

Carnivore vs standard keto

The key differences: carnivore produces deeper, more consistent ketosis because there is no dietary carbohydrate to compete with fat oxidation. Standard keto requires monitoring net carbs; carnivore requires monitoring nothing - all animal foods are inherently zero-carb. Standard keto allows more dietary variety; carnivore is simpler (no label-reading required) but more restrictive socially. Carnivore eliminates potential plant-based inflammatory triggers, which is why it is disproportionately popular among people with autoimmune conditions.
