This is the kind of breakfast you make when eggs alone are not going to cut it. Ground pork browns with peppers and warm spices, then you crack the eggs right into the same pan and cover it so they set gently.

Everything cooks in one skillet and it holds up for a couple of people or one very hungry one. A shake of hot sauce at the table pulls it together.

Ingredients

  • 3/4 lb ground pork
  • 1 large bell pepper, diced
  • 1/4 small onion, diced
  • 4 large eggs
  • 1/2 cup shredded cheddar
  • Salt and pepper
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Hot sauce to serve

Instructions

    Brown the ground pork in a skillet over medium-high heat, breaking it up as it cooks.

    Add the bell pepper and onion with the cumin, chili powder, salt, and pepper, and cook until the peppers soften, about 5 minutes.

    Spread the mixture flat and make four small wells with the back of a spoon.

    Crack an egg into each well, cover the pan, and cook 4 to 6 minutes until the whites set.

    Scatter the cheddar over the top and cover for one more minute to melt it.

Tips

  • Cook the eggs longer if you like firm yolks, or pull the pan early for runny ones.
